Sugar-free custard

Ingredients

1 cup milk

1/2 teaspoon vanilla extract

7 teaspoons Xylitol

1/4 teaspoon salt

2 large egg yolks
-
2 teaspoons corn starch (Mazena)

Method

Heat milk until steaming on the stove or in the microwave.

Add Vanilla extract, Xylitol, salts and corn starch.

In a separate bowl, beat egg yolks. Add a little of the hot milk and mix well (tempering).

Repeat, adding a little more milk so you gradually bring the eggs up to temperature.

Heat mixture (but do not boil or it will curdle). It can be done by stirring the mixture on a stove set to low heat or in the microwave by heating and removing and stirring in 30-second intervals.

Mix until thick.
